I made these Cinnamon & Apple Oatmeal Cups last Sunday and I absolutely adored them. They make for the perfect healthy and filling snack or dessert. I’ve had one when I was still a little hungry after a meal or just as a snack and loved it. It is very easy to bake: takes 15 minutes to make the mixture and 25 minutes to bae. Without further due, here is the recipe!

Ingredients: 

3 cups rolled oats
2 large eggs
1 cup almond milk
1 1/2 tsp cinnamon powder
1 tsp baking powder
1 pinch salt
1 cup apple peeled and chopped
1 tsp pure vanilla extract
1/3 cup pure maple syrup

 Instructions:

Mix dry ingredients in a bowl.
Mix wet ingredients in another bowl.
Add wet ingredients to the dry ones, whisk in apple and mix well.
Preheat oven to 350F and spray a muffin pan with non stick cooking spray. (I used coconut oil)
Evenly distribute the mixture between all 12 cavities of the muffin pan and bake at 350F for 25 mins.

Allow the cups to cool down for five minutes before eating.
Store in the fridge in a closed container.

  4. Fill the muffin cups to about 3/4th capacity with the mixture.
  5. Bake the cups in the oven for about 20-25 minutes or until the tops turn golden brown and a toothpick comes clean when inserted into the center of the cups.
  6. Allow the oatmeal cups to cool for a few minutes before you transfer them to a shelf or rack.
