Healthy eating: easy, low carb almond butter cookies

I’m a fan of all things easy and quick when it comes to cooking. We are all busy – yes, even in quarantine! – and unless you are a chef and have a passion for cooking or baking, you may not want to spend half a day (or even an hour for that matter) in the kitchen. I came back home from a long drive starving tonight. I had this recipe on my mind for a couple days and was wondering what it would taste like so I decided to give it a try. It would be our snack while my husband and I would make dinner.

I love mixing ingredients I already have at home. On this recipe, I combined 4 ingredients: 1 egg, 1/2 cup of crunchy almond butter, 1/4 cup of unsweetened shredded coconut and 1 tbsp of maple syrup. The instructions are as simple as mixing all ingredients in a bowl, preheating the oven to 350F, lining a baking pan with parchment paper and baking for 10 minutes.

This batch makes for 8 small cookies. If you don’t find them sweet enough, you can add maple syrup on top and incorporate more maple syrup in the mixture next time you make them.

Note: if you don’t have almond butter, you can use either pecan butter, cashew butter or,  if you really don’t have a choice, peanut butter.

That’s it! Healthy eating is easy and can be tasty if you know how to combine ingredients together.
