Healthy breakfast ideas: I am always on the lookout for creative and delicious ways to incorporate more proteins to my breakfasts and this Quinoa Crêpe recipe basically is the perfect one that I believe I will be making very often from now on. It is simple to make, contains no dairy, no added sugar, no gluten and a whole lot of protein.

Here’s the recipe: Makes 2 large crêpes.

Ingredients:
1 cup red quinoa blended to turn into flour.
1 cup unsweetened almond milk
1 cup water
1 egg for the mixture and 2 eggs to serve with the crêpes
1/2 tsp salt
Ham
Grated cheese of your choice
Maple syrup

Instructions:
In a blender, blend quinoa until it turns into a flour.
Put blended quinoa in a large bowl, add unsweetened almond milk , water salt and one egg, and mix well until all ingredients come together.
Put a bit of butter in a medium to large pan, place enough mixture to make a crêpe, wait for 1 minute then turn it for another minute then place in a plate.
In another pan, make 2 eggs however you like them.
Place a crêpe in each plate, add ham, add ham, egg, cheese and maple syrup. Enjoy!

Instructions

  1. Whisk together the quinoa flour, milk, egg, salt, and black pepper in a mixing bowl until you have a smooth batter. Leave it for a few minutes.
  2. Heat a non-stick pan over medium-high heat. Grease it lightly with cooking oil or spray.
  3. Pour a small amount of the quinoa batter into the pan, swirling it around for an even spread. Cook for about two minutes on one side until the batter starts to set and turn light brown. Flip and cook the other side the same way for another 1-2 minutes. Repeat until you have used all the batter to make multiple crepes.
  4. Add a slice of lean ham and shredded cheese to each quinoa crepe. Fold the crepe in half or roll it up.
  5. Fry or poach an egg to your liking in a separate pan.
  6. Place the cooked egg on top of the ham and cheese-filled crepe. Garnish with fresh herbs.
  7. Serve hot.
