Healthy Snack/Dessert Recipe – Date, Almond, Oat and Pecan Bars

Okay, friends, next time I make these, just remind me not to eat the entire batch in two minutes. Yes, they’re that good. I like to bake on Sunday mornings, after two cups of coffee and before making breakfast. It’s not a ritual per se, but as of late, I’ve been enjoying it. Yesterday, I decided to make these nut, date and oat bars, and simply put, they’re plain sensational. You can make them in bars, balls, granolas or cookies, however form you prefer.

Ingredients:
1 cup ground almonds
1 cup rolled oats
1 cup pitted dates
1/2 tsp salt
4 tbsp coconut oil
2 tbsp almond milk
1 handful of pecans chopped
Unsweetened shredded coconut

Instructions:
Heat dates in microwave about 1 minute until they completely soften and you can easily crush them into a purée.
Add the dry ingredients (except dates and coconut) in a bowl and mix well.
Add the wet ingredients in a separate bowl and mix well.
Add the wet ingredients to the wet ones and mix well.
Add dates to the mixture and, with your hands, mix until all ingredients come together and form a thick ans sticky dough.
Preheat oven to 350F. Line a baking sheet with parchment paper and either form cookies, balls, granolas or bars then sprinkle with coconut and bake for 15 mins.

Allow to cool completely before enjoying. Tastes divine!
